GREAT BALLS OF SPINACH
(makes ~50 balls)

Ingredients:

22oz fresh spinach

1 large onion, finely chopped

6 eggs, well beaten

10 tbsp butter, melted

1/2 cup finely chopped bacon (about 4 thick slices browned but not crisp)

3 cup whole wheat bread crumbs (tiny cubes, thoroughly dried)

3/4 Parmesan cheese

1 1/2 tbsp pepper

2 tsp Herbs de Provence

1/2 tsp thyme

1 tsp garlic salt

Directions:

With fresh bread, you can chop it up the day before and let it dry out overnight. Bake the breadcrumbs in the oven at 300 degrees F on a cookie sheet to completely dry out the bread.

Wilt the fresh spinach, compress and drain thoroughly. Chop the spinach well.

Combine all the ingredients and mix well.

Really, that’s it?

Crazy easy, I know.

Next form 1″ to 1 1/4″ balls and set on greased cookie sheets.

Bake at 350 degress F for about 35 minutes or until browned on their bottoms.

Now EAT!!
