Team Deez Nutz Are Hot:
“Hot Summer Asphalt Cookies”
Makes 30-40 cookies
Ingredients:
1 1/2 cups whole wheat flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 teaspoon ground ginger
2 large eggs
1 stick (1/2 cup) butter, softened
1 1/2 cups dark brown sugar, firmly packed
1/2 cup vegetable oil
1/3 cup almond butter
1 teaspoon vanilla extract
1/2 cup unsweetened cocoa powder
2 cups quick oats
1 cup bittersweet (60% cacao) chocolate chips
1 cup Trader Joe’s Sweet & Spicy Pecans, chopped
Directions:
Combine first 6 (dry) ingredients in small bowl, set aside.
In a separate bowl, beat together butter, sugar, and eggs, then add almond butter and oil, and beat to combine.
Blend in cocoa powder and vanilla extract until smooth.
Add oats and mix to incorporate, then add chocolate chips and pecans and mix to fully incorporate.
Chill cookie dough for at least 2 hours, covered with plastic wrap.
Preheat oven to 360 degrees. Scoop dough onto parchment-paper lined baking sheets, then flatten with fork.
Bake at 360 degrees for 15 minutes. Cool on baking sheet for 5 mins, then transfer to rack to cool completely.
